Raw food diets sometimes include honey, agave nectar, and cocoa. In this book, these have been substituted by soaked dried fruit. Cocoa is replaced with carob powder, which has a similar taste but no caffeine.
Superfoods are, in short, foods that are particularly packed with nutrients. Many berries, powders, and seeds are superfoods.
Açai are berries that grow on palm trees in the Amazon and are incredibly rich in antioxidants. The taste is a mixture of cocoa, olives, and raisins. Use for breakfasts and smoothies.
Buckwheat is an herb and therefore gluten-free. Buckwheat needs to be soaked for about eight hours. During soaking a reddish slime is formed that you need to rinse off carefully. You can sprout buckwheat in one to three days in order to optimize the nutrition. Buckwheat is particularly rich in the minerals magnesium, zinc, and iron.
Carob powder tastes a lot like cocoa and comes from the carob tree that grows around the Mediterranean. Carob is rich in iron and calcium and, unlike cocoa, contains no caffeine.
Chia seeds are rich in dietary fiber, protein, antioxidants, omega-3 fatty acids, and minerals and amino acids. When chia seeds are soaked, they absorb water up to twelve times their own weight. The seeds act as a blood glucose stabilizer. They have a neutral taste and are eaten soaked, as cereal, mixed into a fruit cereal, or used in smoothies. The small seeds are usually my rescue when I feel hunger setting in—I stir some in a glass of lukewarm tea, wait ten minutes, and drink. My blood sugar stabilizes, and I get an easy and comfortable sensation of being full. It’s best to soak them a little longer, about four to eight hours.
Cocoa nibs come from the raw cocoa bean. Cocoa bean is one of the best natural sources of magnesium, iron, and chromium and is also incredibly rich in antioxidants. Remember that cocoa can make you really perky, so take it easy in the evening with those little yummies. The pieces are delicious to use in smoothies, sprinkle on top of raw ice cream, or just nibble on as they are with goji berries.
Cocoa butter is a cold-pressed product of the cocoa bean. The cocoa butter is rich in vitamin E and beneficial fatty acids. With cocoa butter you can make raw truffles. Cocoa butter is also soft and smooth to use on the skin. In order to use it, you must first melt it slowly over a lukewarm double boiler.
Coconut oil contains saturated fat, but it is a saturated fat that the body needs and that helps the metabolism. The oil is liquid at about 75 F (25 C) degrees. If the oil is solid, liquefy it over a lukewarm double boiler. Coconut oil also contains lauric acid and caprylic acid, which have an antibacterial affect on the body. When I get a little sweet craving I take a teaspoon of coconut oil—and that takes care of it. The oil is also ideal for moisturizing your skin.
Goji berries are a red berry that is both sweet and sour.
